Mutton Pepper Fry is a spicy and delicious South Indian dish made with Mutton pieces cooked in pepper-based gravy. This dish is the best companiment to Rice and Roti.
There are many different recipes of Mutton Pepper Fry but here I have an amazing and easy recipe for you. Follow all the steps.
INGREDIENTS FOR PEPPER FRY
1. 1 Teaspoon Fennel Seeds
2. 1 teaspoon Cumin Seeds
3. 2 table spoons Ground Black Pepper
INGREDIENTS FOR COOKING
1. 4-5 table spoons Cooking Oil
2. 1 table spoon Ghee
3. 4 medium size Onion
4. 1 kg Mutton
5. 1/2 teaspoon Fennel Seeds
6. 7-8 Curry Leaves
7. 7-8 Garlic Cloves
8. 2 table spoons Ginger Garlic and Green chili paste
9. 1/2 teaspoon Cumin Seeds
10. 1/4 teaspoon Turmeric Powder
11. 1/4 teaspoon Garam Masala
12. Salt to taste
13.3 NOS Green Chilies
14. A handful of Green Coriander
15. A handful of Curry Leaves
16. Pepper Fry Masala
17. 1 table spoon of Lemon Juice
18. 200ml Water
RECIPE
1. Take a small pan and add Cumin Seeds, Fennel Seeds and Ground Black Pepper to it and dry roast them. Keep in mind that flame should be low.
2. When the spices turns light brown then turn off the flame and transfer the spices into a bowl.
3. Let the spices be completely cool, make a fine powder of these roasted spices.
👉 This is the perfect pepper fry masala. We will further use in recipe.
4. Add Oil in a pressure cooker and turn on the flame.
5. When Oil becomes hot, Add Cumin Seeds, Fennel Seeds, and chopped Garlic. Stir and cook for few seconds on medium to low flame.
6. Add Sliced Onion and cook until the Onion turns light golden brown. The flame should be medium to high.
7. Now add Mutton, salt, turmeric powder, garam masala, curry leaves and ginger garlic chili paste to it and cook for 3/4 minutes.
8. Add water and pressure the cooker on high flame for first whistle then lower the flame and cook for more 4-5 whistles until Mutton cooked 90%.
👉 Cooking time depends upon the quality of Mutton and air pressure.
9. Turn off the flame and leave the cooker to naturally depressurize.
10. Open the lid and add pepper fry masala (dry roasted spices powder), curry leaves and Chopped Green chilies into it. Stir well and cook until all the moisture get evaporated.
11. Continue Cook for 2-4 minutes on medium to low flame. Masala should be properly stick to the Mutton.
👉 If required then You can adjust the salt in this level.
12. Heat 1 table spoon Ghee in a pan and add over the Mutton. Then add Chopped fresh Coriander to it.
13. Transfer the Mutton Pepper Fry into a serving bowl and add lemon juice to it.
14. Super delicious Mutton Pepper Fry is ready to eat. Enjoy.
