Korean fried potato

Korean fried potatoes also known as "Korean-Style Potato Bites" or "Gamja Jjim" are the popular Korean snacks. Korean Crispy Potatoes have gained worldwide popularity, not only as a side dish but also as a appetizer or snack. 



They are often seasoned with a sweet and savory mixture of sauces such as soya sauce, honey, vinegar, garlic and sesame oil.

There are many recipes of Korean fried potatoes but here I will share a unique Korean recipe with you. Follow all the steps.


 INGREDIENTS

1. 500 gram Potatoes (4-5 medium size)



2. Salt  as per your taste


3. 1/4 Cup Corn Flour



4. 1 teaspoon Vinegar


5. 1/4 Cup Refined Flour



6. A pinch of Black pepper powder


7. A pinch of Baking Soda



8. Ice Cold Water as required


INGREDIENTS FOR SAUCE


1. 2 table spoon Gochujang 



2. 1/4 teaspoon Vinegar


3. 1 table spoon Light Soya Sauce



4. 2 table spoon Sesame Oil


5. 2 tale spoon Honey



6. 1 teaspoon Chopped Garlic


7. 1 teaspoon Chopped Ginger


8. Spring Onion (garnishing)



9. White Sesame Seeds (garnishing)


RECIPE

1. Peel off Potatoes and cut into thick batons, then wash with normal water to remove the extra starch.



2. Now take a wok and add water into it. When the water starts boiling, add 1 teaspoon Vinegar, a pinch of Salt and Potatoes to it. Let it cook for 3-4 minutes.



👉 When the Potatoes become a little soft, remove them from the water. Do not boil them too much because they will break when you add them into the batter. 


3. Now remove the Potatoes from water and let them cool down completely.


4. Add refined flour, Corn Flour, Salt, Baking Soda, Black Pepper Powder and ice cold water into a large bowl to make a semi thick batter. The batter should not be too thick or too thin.

👉 Add the water while continuously stirring or whisking it. 



5. Dip all the boiled Potatoes into the batter and mix well so that all the potatoes covered with the batter.



6. Heat the oil in a pan and fry the potatoes on medium to high flame until light golden brown. 



👉 Keep in mind that this is the first fry of potatoes, potatoes should be light golden and it should not be too golden brown.


7. Transfer the potatoes into a sieve and let them rest.  




RECIPE OF SAUCE

1. Take a wok and add Gochujang, Vinegar, Light Soya Sauce, Sesame Oil, Honey, Chopped Garlic and Chopped Ginger into it. Mix well and switch on the flame and bring the sauce a boil. Cook it briefly, until it thickens up. Switch off the flame. 



👉 Sauce is ready.


DIP POTATOES INTO SAUCE


1. Now again heat the oil on low flame and let it heat until it reaches a high temperature i.e 180'c. 


2. Add the potatoes in hot oil and just flash fry them for almost 30 seconds on high flame. Potatoes will turn golden brown.


3. Add the fried potatoes into the sauce and turn off the flame. Evenly coat all the sauce on potatoes, do not cook on this stage.


4. Bring out in a serving bowl and garnish them with spring onions and sesame seeds. 



👉 Delicious Korean fried potatoes are ready to eat. Enjoy with your family and friends.
