Gujrati Dal is a famous Indian Lentil dish Originated from the Gujrat. It is often made with the Split Pigeon Peas (tur dal) with the combination of different spices.
It serve with steamed rice, roti or other flatbread. There are some recipes which may include vegetables like Spinach, carrots or potatoes for nutrition. This Dal can be prepared in various ways like mild, spicy or tangy.
There are many recipes but here I will share a unique and easy recipe with you. Follow all the steps.
INGREDIENTS
1. 1 cup Split Pigeon Peas (toor dal)
2. Salt to taste
3. 2 table spoon Tamarind
4. 2 table spoon Peanuts
5. 2 table spoon Ghee
6. 1/2 teaspoon Mustard Seeds / rye dana
7. 1/2 teaspoon Cumin Seeds
8. 1/2 inch Cinnamon Stick
9. 3-4 NOS Cloves
10. 2 NOS Red Chilies
11. A pinch of Fenugreek Seeds
12. 1/2 teaspoon Asafoetida/Asparagus/Hing
13. 13-15 curry Leaves
14. 1-3 tablespoon Jaggery
15. 1 medium size Tomato
16. 1 table spoon Ginger Chili Paste
17. 1/4 teaspoon Turmeric Powder
18. 1/4 teaspoon Kashmiri Red Chili Powder
19. A handful of Fresh Green Coriander
20. Hot Water as required
RECIPE
1. Wash the Toor dal properly and soak for an hour before cook.
2. Soak a handful of Tamarind in hot water.
3. When soaked for an hour, discard the water and add the lentil(dal), Salt, Turmeric Powder and Water into the pressure cooker.
4. Add peanuts into a small steel bowl and place over dal in the cooker and put the cooker's lid on and cook it for 5 whistles on high flame, turn off the flame and let the cooker de-pressurize.
5. Open the lid and remove the peanuts bowl and set them aside.
6. Blend the dal by using an emulsion blender or a whisk.
7. Now mash the soaked Tamarind to remove all its pulp and strain it by using a sieve. Tamarind pulp is ready.
8. Take a pan and add ghee/oil in it. Once the Ghee gets hot add Cumin Seeds, Cinnamon, Cloves, Mustard Seeds, Fenugreek Seeds, Red Chilies, Asafoetida, Curry Leaves and Ginger Chili Paste to the pan. Stir and briefly cook on high flame.
9. Now add Tomatoes and Salt and cook until tomatoes turn mushy on high flame.
10. Now add Kashmiri Red Chili and Turmeric Powder.
11. Stir well and add cooked lentil and hot water to adjust the consistency.
12. Now add Peanuts, Tamarind pulp and jaggery and further cook for 1-2 minutes on low flame. Taste the dal and if needed then you can add salt to your preference.
13. Cook till the Dal reaches the right consistency, Dal should not be too thick nor too thin.
14. At last, add chopped Fresh Coriander and green chilies if you need.
15. Take out the Dal in a serving bowl and serve with Rice, Naan, Pickle and Salad.
