Chicken Malai Kabab

 Chicken Malai Kabab is a popular Pakistani and Indian dish made with marinated chicken cooked in a creamy sauce. The Chicken is grilled or pan fried until golden brown , resulting a mildly spiced, melt in the mouth texture, with a creamy flavor.




It is a very delicious and flavorful dish. There are many recipes of Chicken Malai Kababs but here I will share my unique and authentic recipe with you. Follow all the steps.


INGREDIENTS


1. 700 gram Boneless Chicken


2. 2 Bread Slices


3. 1 Medium size Onion


4. 1-2 Green Chilies


5. 1 teaspoon Ginger Garlic Paste


6. 1 teaspoon Salt


7. 1/2 teaspoon Red Chili Powder/Chili Flakes


8. 1/4 teaspoon Turmeric Powder


9. 1 table spoon Coriander Powder


10. 1/2 teaspoon Cumin Powder


11. 1 teaspoon Garam Masala


12. 2 table spoon Ghee/Oil


13. 4 table spoon Fresh Coriander


14. 2 table spoon Fresh Mint


INGREDIENTS FOR CREAMY MIXTURE


1. 1 cup Yogurt


2. 1/2 cup Cream


3. 3 table spoon Mayonnaise


4. 1/2 cup Milk


5. 1 table spoon Green Chutney


6. 1 teaspoon Chaat Masala


7. 2-3 table spoon Butter


RECIPE


1. In a Chopper add Chicken, Bread Slices, Onion, Green Chilies, Ginger Garlic Paste, Salt, Red Chili Powder, Turmeric Powder, Coriander Powder, Cumin Powder, Garam Masala,  Ghee, Fresh Coriander and Fresh Mint. 




👉Chop well and marinate for at least 30 minutes or up to 2 hours.


2. To add a rich smoky flavor to Kababs, heat the coal over direct flame until it starts to glow red hot. Place it in the mixture on the foil. Let the coal smoke infuse the Kababs for 5-7 minutes or until the mixture is well coated with the smoky flavor. Remove the coal and mix the mixture well to ensure the flavor evenly.

 

3. Before making Patties lightly Oil your hands that is why the mixture will not stick to your hands. 

Shape each portion into a oval or round patty. Divide the mixture into 8-10 portions depending on the desire size of seekh kabab. 


4. Make sure that the edges are smooth and the patty is evenly thick.


5. Insert a skewer into each patty, make sure its centered and secure. 


6. Now hold the skewers over a medium-high-flame, rotating every 8-10 seconds to ensure even cooking.


7. Cook for 1-2 minutes per side or until the chicken is slightly charred and cooked about 40%. 




8. Add 3 table spoon Oil in a Pan and heat it on medium flame.


9. Add kababs and fry on medium flame until light brown. 


10. Take a bowl and add Yogurt, Cream, Mayonnaise,  Milk, Green Chutney and Chaat Masala and mix everything well.


👉 In a blender add Fresh Coriander, Fresh Mint and Green chilies. Add water as needed and blend for 1-2 minutes. Green Chutney is ready.


11. Pour this mixture over the Kababs.


12. Take another pan and add Butter to it. When the butter melts pour it over the whole mixture. 


13. Now a great finishing touch ! Sprinkle fresh Coriander and Mint over Kababs . It will add a burst of fresh flavor and a pop of color to the Chicken Malai Kababs. 




14. Let the Chicken Malai Kababs  rest for few minutes before serving to allow all the juices to redistribute.

 

Delicious Chicken Malai Kababs are ready to eat. Serve with your favorite sides, such as naan, salad or raita.
