RECIPE OF YAKHNI

1. Add beef, onion, garlic cloves, ginger, coriander seeds, cumin seeds, fennel seeds, black pepper, star anise, cloves, green cardamom, black cardamom, cinnamon, bay leaves, salt and 2 Liter water into the pressure cooker and cook on medium flame for  28 -30 minutes.

2. After 30 minutes, turn off the flame but do not remove the whistle.

3. Add Ghee in a large pot, making pulao in ghee makes it more flavorful.

4. Cut the Onion into thin slices and leave on medium flame to lightly brown.

5. When the Onion turns brown take out a little of it for garnishing.

6. Now add Garam masala and 2-3 sips of water to it and immediately cover with the lid.

7. After 1 minute take out the lid and add tomato paste to it.

8. Now cook for 2-3 minutes until tomato water dries up.

9. Add Ginger Garlic paste, chopped Green Chilies, Chili Flakes, and Salt to it.

10Place the lid over it and leave for 5 minutes on medium flame.

 11. Soak 1 spoon of Tamarind (imli) into 3 spoons of water for 15-20 minutes.

12.  Now add yogurt to it and cook until its water dries up. It may take 2-3 minutes.

13. Remove the whistle from pressure cooker.

14. Now separate the spices and beef from Yakhni.

15. Add beef in Tadka (tempering) and cook for 3-4 minutes in medium flame.

16. Now with the help of a strainer add Yakhni in the Tadka. We added 2 Liters of water , out of which 1.5 Liter water will remain, have to put all that in Tadka.

👉Take care that the other spices which we have added in the yakhni should not put in the Tadka.

17. When the Yakhni boils, add Rice to it and cook on high flame until its water dries up.

18.  The spoon should be moved very slowly so as not to break the Rice.

19. High flame dried the water in 3-4 minutes.

20. Now add  Green chilies, Green Coriander and Onion which we keep separate from the tadka for garnishing.

21. Put aluminum foil or any cloth over the lid and cover the pot. Cook for 15-20 minutes on a very low flame.

22. Take off the lid for 2-3 minutes and then serve the Rice.
