Gobi ka paratha is a popular Pakistani and Indian flatbread, which is made by flour, Cauliflower (Gobi) and some other spices.
This paratha is often served with Pickle, yogurt and with some other dips.
There are several recipes of making Gobi Paratha but here I am going to share my unique recipe.
By following all the steps you will definitely be able to make crispy, puffy and delicious Gobi paratha.
Ingredients For Kneading Dough
1. 2 cup wheat Flour
2. 1 cup white Flour (meda)
3. 1/2 teaspoon Salt
4. 1 table spoon cooking oil
5. Half cup milk
6. 1 cup lukewarm water
Ingredients For Filling
1. Half kilo cauliflower
2. 3 table spoon cooking oil
3. Half teaspoon cumin seed
4. 1 teaspoon Ginger Garlic Paste
5. 3-4 Chopped Green Chilies
6. 1 teaspoon Chili Flakes
7. 1 teaspoon Salt
8. 1/4 teaspoon Turmeric powder
9. 1/2 teaspoon dry coriander powder
10. 1/2 teaspoon Gram Masala
11. 2 table spoon Green Coriander
12. 1 table spoon Green Onion
13. 1/4 teaspoon Lemon Juice
Kneading The Dough
1. Take a bowl and add wheat flour and white flour to it.
👉 Adding white flour is make the paratha more crispy. But if you do not want to use white flour then use three cup of wheat flour.
2. Add Salt, cooking oil and milk to it.
3. Mix them well with the help of a spoon or hand.
4. Now add lukewarm water and start kneading the dough with the help of hands.
👉 By using lukewarm water the dough will be ready in 3-4 minutes
5. After kneading apply a little oil on the dough, cover it and rest for 10 minutes.
Recipe Of Filling
1. Take a clean cauliflower Floret and cut into small pieces.
2. Then wash these pieces thoroughly.
3. Grind it finely with the help of a grater.
👉 when we grind it finely with the help of a grater, it will not break the paratha bread.
4. Take a pan and add cooking oil into it.
5. Heat the oil in medium to low flame and then add cumin seed and garlic ginger paste into it.
6. When it slightly changes the color add crushed cauliflower to it.
7. Add salt, chili flakes, garam masala, dry coriander powder, turmeric powder, chopped green chilies and mix well.
8. Switch off the flame and the add lemon juice, green coriander and green onion to it.
9. Then take it out in a bowl or a plate.
Filling and Paratha Making
1. Make small dough balls and rest them for 5 minutes.
👉the weight of a dough ball should be 50 grams.
2. After that with the help of hands or a glass, make these dough balls as big as a patty.
Now make patties of this stuffing with the same size of dough patties.
3. Take one dough patty, place the stuffing inside, and then put another dough patty over it.
4. Make it bigger little by little with the help of hand.
5. After that roll out the bread very gently with the help of a rolling pin.
6. Roll out all the breads one by one.
7. Heat the tawa on high flame, then turn the heat down from medium to low.
8. Now put the bread on tawa and when it slightly changes color, change the side.
9. When both sides changes color slightly, then add Ghee.
10. Add Ghee on both sides and cook for 3-4 minutes on medium flame, a delicious, soft and puffy paratha is ready.
Serve with yogurt, pickle or with your favorite chutney.
